I've recently discovered Kathleen Fischer's games, after playing Masquerade and trying Cove a bit, and I love her writing. This is a short game about a prisoner confessing to a friar. The game is primarily conversation-based, although some non-conversation actions are required to win.
The game is a conversational maze. Most conversation options lead to bad endings. The good ending requires some very specific and perhaps non-intuitive choices (being a good boy and a yes-man don't help).
The story was a bit hard to piece together, but it really looked good overall. Recommended for fans of conversation games.
An interactive conversation, in which part of the point is to explore the background story and discover your relationship to the main protagonist. The implementation is interesting, but it is extremely easy to get sub-optimal endings and to be unable to discover the full backstory. Some players found it quite immersive and natural, while others struggled with the interface a bit.

One-room conversation games by Sorrel
I'm looking for a one-room game where the main focus is the conversation with an NPC. The kind of game where the NPC feels so realistic that you actually begin to feel an emotional connection of sorts. Something to the effect of Galatea.
